Grilled salmon with minted salsa

Serves 8

  • 4  medium organic tomatoes — peeled
  • 1 small yellow onion — sliced
  • 1  jalapeno Chile pepper — coarsely chopped
  • 6  green onions — chopped
  • 2 Pinches mint — finely shredded
  • 1 Tbsp. garlic — chopped
  • Salt and pepper — to taste
  • 8  Wild salmon fillets — approx. 6oz. Each
  • 1/2  cup low-fat sour cream — room temperature or Greek Yogurt, Plain
  • 1 organic lemon – cut in to wedges

Directions:

  1. Place 2 of the tomatoes, the onion, and the jalapeno in boiling water and cook until soft, about 5 minutes.
  2. Drain and puree in a blender or food processor, transfer to a bowl.
  3. Dice the remaining tomatoes and combine with the puree in to the bowl.
  4. Add the green onion, mint, and garlic and season to taste with salt and pepper to taste.
  5. Heat a grill to medium – high, broil the salmon until barely opaque, about 4 minutes per side.
  6. Warm the salsa and pour it over the salmon fillets.
  7. Drizzle with sour cream or yogurt and serve with lemon wedges.

Notes: the salsa in this recipe is partly pureed and partly chunky to provide the proper texture.  Don’t have time to make salsa? Buy organic Trader Joes or 365 Brand and add chopped fresh mango (optional).
